The preparation of our graffe is mainly manual and each step is characterised by accuracy and by a great respect for the rest time of the dough. We never rush.
We dedicate a lot of time to all the phases of dough rising, because we are aware that only a slow rising can produce an easy to digest and light product and will give life to the range of delightful flavours that recall past days.
So we are never surprised when our guests are astounded by the fact that even after the seventh or eighth graffa they still feel a sense of lightness… and keep asking:
